FROM POD TO PLEASURE
A great chocolate bar requires great cocoa beans and even better farmers. We ethically source our beans from the Dominican Republic, which happens to be the first and largest organic cocoa producer in the wold!
We obtain the beans by partnering with local farmers who cultivate the beans extensively and according to organic standards. The main harvest is usually done between April and July with a smaller harvest taking place between November and February.
After the harvest, our beans are fermented for 5-7 days using a multi-stage process. This fermentation is extremely important to bean quality as it removes the pulp and triggers important changes to the color and taste.
When all is said and done, the fair trade premiums are then invested into the local areas community projects, such as contributions to local schools, replenishing cocoa trees and renovation on buildings.
